I have 2 Windows 2016 servers that I p2v'ed and moved to xcp-ng. Created an individual backup for both as one is a larger SCCM server. One always runs successfully (SCCM box that has two disks) but the other always hangs at 100% (very lean server that runs a few small utilities). Never completes. I've let it sit for 24hours. Nothing I can see in the logs. Any where else I should be looking? Stumped. I have deleted all snap shots and re-ran the backup many times. Always hangs at 100%

I assume you have tools installed in your VMs?

You should try to export the VM manually (eg with xe CLI) to see if you can do so.
