Is it possible to install some of the proprietary packages on our own? GFS2 was one of the things in 7.6 that I was most excited about.

Thin Pro on block is very very very immature in XenServer. You can't even migrate VDIs on this SR to another one (nor toward it).
Frankly, it's still messy, avoid it.
