I manage a school with a 3 node VMWare cluster and am in the process of planning a server refresh. When we setup the current servers, the HPE Simplivity team spent a day or two with us setting it up to make sure it was done as per best practise.

Does Vates offer anything like that for small sites? I see something about that for the enterprise support, but I don't think we'd qualify for that since we have less than 4 nodes.

Also, does anyone know what support is like in the Australian Eastern Timezone (UTC+10)? We often get limited in vendor choice due to not getting support during business hours from anyone but the major players (and sometimes not even then).

I don't think that's going to be an issue with Vates, they have ppl in different parts of the world and they're very helpfull.
Reach out to them and link this forum thread, im sure they will be able to get you going even tho you're in Australia.
