One pool, one server.
Can I set a default selection for this pool/server when I choose new vm, storage, network?

Whenever a server or pool is needed, so the field doesn't stay empty and requires manual selection.
For example, when creating a new VM, the screen is empty with one line:
Create new VM on: [pull down]The same goes for some other items but I don't click nearly as much so in particular for creating new VM's it would save some time if a default could be configured.
